1 lb boneless, skinless chicken thighs, diced

1/4 cup soy sauce (low sodium)

1/4 cup mirin (sweet rice wine)

2 tbsp brown sugar

1 tbsp sesame oil

1 clove garlic, minced

1 tsp fresh ginger, grated

1/2 cup green onions, finely chopped (reserve some for garnish)

1/2 cup shredded carrots

1 red bell pepper, finely diced

1/4 cup water chestnuts, diced (optional)

1 head of bibb or butter lettuce (12-15 leaves)

Sesame seeds for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger. Add the diced chicken thighs and mix well. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Cook the Chicken: Heat a large non-stick skillet over medium-high heat. Once hot, add the marinated chicken along with the marinade. Stir-fry for about 7-10 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

      Add Vegetables: Stir in the green onions, shredded carrots, red bell pepper, and water chestnuts (if using). Cook for an additional 2-3 minutes, allowing the veggies to soften slightly while still maintaining some crunch.

        Assemble the Cups: Carefully separate the lettuce leaves from the head, keeping them whole. Spoon a generous amount of the teriyaki chicken mixture into each lettuce leaf.
