Ingredients

1 lb ground turkey

Zest of 1 lemon

2 tbsp fresh lemon juice

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1/2 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1/4 cup plain breadcrumbs

1 egg, beaten

4 whole grain burger buns

Lettuce leaves (for serving)

Sliced tomatoes (for serving)

Avocado slices (optional, for serving)

Tzatziki sauce or yogurt (optional, for spreading)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the ground turkey, lemon zest, lemon juice, minced garlic, parsley, cilantro, oregano, salt, pepper, breadcrumbs, and beaten egg. Use your hands to mix until just combined, avoiding overmixing to keep the burgers tender.

Form the Patties: Divide the mixture into 4 equal portions and shape each portion into a patty, about 3/4 inch thick. Make a small indentation in the center of each patty to help them cook evenly.

Chill the Patties: Place the patties on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes. This helps them firm up and hold their shape during cooking.

Cook the Burgers: Preheat a grill or skillet over medium heat. Lightly oil the grill grates or skillet. Cook the turkey patties for about 5-6 minutes on each side, or until they reach an internal temperature of 165°F (74°C) and are golden brown on the outside.

Toast the Buns: While the burgers are cooking, you can toast the burger buns on the grill or in a toaster until they are lightly golden.

Assemble the Burgers: Place a lettuce leaf on the bottom half of each toasted bun, followed by the cooked turkey patty. Top with sliced tomatoes and avocado if desired. Add a dollop of tzatziki sauce or yogurt, then cap the burger with the top half of the bun.

Serve and Enjoy: Serve the burgers immediately with your favorite side dishes, such as sweet potato fries or a crisp salad.
