2 ripe avocados, diced

1 large ripe mango, diced

1 small red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1/2 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon olive oil

1 teaspoon honey or agave syrup

1/2 teaspoon chili powder (adjust to taste)

Salt and pepper to taste

Optional: 1/4 cup crumbled feta cheese for serving

Instructions
 

In a large mixing bowl, combine the diced avocados, mango, red onion, bell pepper, and cherry tomatoes. Gently toss to combine, being careful not to mash the avocados.

    In a separate small bowl, whisk together the lime juice, olive oil, honey (or agave), chili powder, salt, and pepper until well combined.

      Drizzle the dressing over the salad and gently toss to coat all the ingredients evenly.

        Fold in the chopped cilantro, adjusting seasoning with more salt and pepper if necessary.

          If using, sprinkle crumbled feta cheese on top for an extra layer of flavor.
