1 lb (450g) chicken breast, cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

2 tablespoons mirin (optional, for extra sweetness)

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional, for heat)

1 green onion, sliced (for garnish)

Sesame seeds (for garnish)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes prior to grilling)

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, brown sugar, honey, rice vinegar, mirin, minced garlic, grated ginger, sesame oil, and red pepper flakes. Whisk together until the sugar is dissolved. Add the chicken cubes and mix well to ensure they are all coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for best flavor.

    Prepare the Skewers: If using bamboo skewers, make sure they have been soaking in water for at least 30 minutes to prevent burning. Preheat your grill or grill pan over medium-high heat.

      Thread the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the hot grill and cook for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F or 74°C). Brush with leftover marinade during the last minute of cooking for an extra sticky glaze.
