Ingredients
  

1 lb (450 g) chicken breast, diced into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into squares

1 yellow bell pepper, cut into squares

1 medium red onion, cut into quarters

1/4 cup soy sauce

1/4 cup honey

2 tablespoons sriracha (adjust to taste)

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon ground ginger

1 tablespoon olive oil

Salt and pepper, to taste

Skewers (soaked in water if wooden)

Instructions
 

Marinate the Chicken:

    In a large bowl, whisk together the soy sauce, honey, sriracha, rice vinegar, minced garlic, ground ginger, olive oil, salt, and pepper. Add the chicken cubes, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, or up to overnight for deeper flavor.

      Prepare the Vegetables:

        While the chicken marinates, prepare your vegetables: cut the pineapple, red and yellow bell peppers, and red onion into bite-sized pieces.

          Assemble the Kabobs:

            Preheat your grill or grill pan over medium-high heat. Take the soaked skewers and thread the marinated chicken, pineapple, bell peppers, and onion onto them, alternating between ingredients for a colorful presentation.

              Grill the Kabobs:

                Once the grill is hot, place the kabobs on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure the internal temperature of the chicken reaches 165°F (74°C).

                  Serve and Enjoy:
