Sweet Potato & Spinach Bake

2 large sweet potatoes, peeled and thinly sliced

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon nutmeg

Salt and pepper, to taste

1/4 cup milk (optional, for creaminess)

Fresh herbs (like parsley or basil), for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spinach: In a large skillet over medium heat, add olive oil. Once heated, add minced garlic and sauté until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, about 3-5 minutes. Season with salt, pepper, and dried oregano. Remove from heat and let cool slightly.

      Mix the Cheeses: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, nutmeg, and a pinch of salt and pepper. If you'd like a creamier filling, add the milk and mix well.

        Layer the Bake:

          - In a greased 9x13 inch baking dish, layer one-third of the sweet potato slices at the bottom.

            - Spread half of the sautéed spinach mixture over the sweet potatoes.

              - Spoon half of the cheese mixture over the spinach, spreading it evenly.

                - Repeat this process (sweet potatoes, spinach, cheese) for another layer.

                  - Finish with a final layer of sweet potatoes on top, then sprinkle the remaining mozzarella cheese across the surface.

                    Cover and Bake: Cover the baking dish with aluminum foil to retain moisture. Bake in the preheated oven for 30 minutes.

                      Uncover and Brown: After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden and bubbly.

                        Garnish and Serve: Once baked, allow to cool for about 10 minutes. Garnish with freshly chopped herbs before slicing and serving.
