Sweet Potato Quinoa Burgers

1 cup cooked quinoa (rinsed and drained)

1 medium sweet potato (about 1 cup, peeled and diced)

1/2 cup black beans (cooked and drained)

1/4 cup breadcrumbs (use gluten-free if desired)

1/4 cup diced onion

2 cloves garlic (minced)

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1 tablespoon fresh cilantro (chopped, optional)

Salt and pepper to taste

1 tablespoon olive oil (for cooking)

Optional toppings: avocado slices, lettuce, tomato, and your favorite sauce (like tahini or salsa)

Instructions
 

Prepare the Sweet Potato: Boil or steam the diced sweet potato until tender, about 10-15 minutes. Drain and let them cool slightly.

    Mix Ingredients: In a large bowl, mash the cooked sweet potato with a fork or potato masher until smooth. Add in the cooked quinoa, black beans, breadcrumbs, diced onion, minced garlic, smoked paprika, cumin, cilantro (if using), salt, and pepper. Mix well until all ingredients are well combined.

      Form Patties: Divide the mixture into equal portions and form into burger patties, about 4-5 patties depending on your preferred thickness.

        Cook the Burgers: Heat olive oil in a skillet over medium heat. Once hot, carefully add the patties to the skillet. Cook for about 4-5 minutes on each side until golden brown and crispy.
