Sweet Potato Lentil Curry

2 medium sweet potatoes, peeled and diced

1 cup red lentils, rinsed

1 can (14 oz) coconut milk

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece fresh ginger, grated

2 cups vegetable broth

1 tablespoon curry powder

1 teaspoon ground cumin

1 teaspoon turmeric

1 teaspoon paprika

1 tablespoon olive oil

Salt and pepper, to taste

1 cup spinach, roughly chopped

Fresh cilantro, for garnish

Juice of 1 lime

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices: Sprinkle in the curry powder, cumin, turmeric, and paprika. Cook for another minute, allowing the spices to toast slightly.

      Add Sweet Potatoes and Lentils: Stir in the diced sweet potatoes and rinsed lentils, ensuring they are well coated with the spices.

        Pour in Liquid: Add the vegetable broth and coconut milk to the pot. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, until the sweet potatoes and lentils are tender.

          Incorporate Greens: Once cooked, stir in the chopped spinach until wilted. Season the curry with salt, pepper, and lime juice to taste.
