Sweet Corn & Tomato Salad

Ingredients
  

2 cups fresh sweet corn (or 1 can of sweet corn, drained)

2 cups cherry tomatoes, halved

1 avocado, diced

1 small red onion, finely chopped

1 cup fresh cilantro, chopped

1 jalapeño, seeded and minced (optional for spice)

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon honey or agave syrup

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh sweet corn, bring a pot of water to a boil. Add the corn and cook for 3-5 minutes until tender. Drain, cool, and cut the kernels off the cob. If using canned corn, simply drain and rinse.

    Mix Ingredients: In a large bowl, combine the cooked sweet corn, halved cherry tomatoes, diced avocado, chopped red onion, cilantro, and minced jalapeño (if using).

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey (or agave syrup), salt, and pepper until well combined.

        Combine Salad and Dressing: Pour the dressing over the salad mixture and gently toss to coat all ingredients evenly.

          Adjust Seasoning: Taste and adjust seasoning with more salt, pepper, or lime juice as desired.

            Chill and Serve: For best flavor, refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld together beautifully. Serve chilled or at room temperature.
