Ingredients

1 pre-made pie crust (store-bought or homemade)

1 cup fresh or frozen sweet corn (thawed if frozen)

1 cup sharp cheddar cheese, grated

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/2 cup green onions, sliced (plus additional for garnish)

1/2 teaspoon fresh thyme (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Pie Crust: Place the pie crust in a 9-inch pie dish. Prick the bottom with a fork to prevent bubbling. Pre-bake for 10 minutes, then set aside to cool slightly.

Mix Eggs and Dairy: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, salt, black pepper, smoked paprika, and garlic powder until well combined.

Add Corn and Cheese: Stir in the sweet corn, grated cheddar cheese, sliced green onions, and fresh thyme (if using) until evenly distributed throughout the mixture.

Assemble the Quiche: Pour the egg and cheese mixture into the pre-baked pie crust, ensuring the corn and cheese are well dispersed.

Bake the Quiche: Bake in the preheated oven for 35-40 minutes, or until the quiche is set and a golden brown color forms on top. You can test for doneness by inserting a knife in the center; it should come out clean.

Cool and Serve: Remove from the oven and let the quiche cool for about 10 minutes before slicing. Garnish with additional sliced green onions if desired.

Enjoy: Serve warm or at room temperature. This quiche can also be refrigerated and enjoyed cold or reheated!
