4 ears of fresh sweet corn, husked and cut into 1-inch pieces

6 slices of bacon, chopped into small pieces

1 medium red bell pepper, diced

1 small red onion, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or cilantro, chopped, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions
 

Preheat Oven or Grill: If using an oven, preheat it to 400°F (200°C). If grilling, prepare your grill for medium heat.

    Prepare Foil Sheets: Cut four large squares of heavy-duty aluminum foil, approximately 12x12 inches each.

      Mix Ingredients: In a large bowl, combine the sweet corn pieces, chopped bacon, diced red bell pepper, diced onion, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss everything together until well coated.

        Assemble Packets: Divide the mixture evenly among the four squares of foil. Gather the edges of the foil and fold them together tightly to form packets, ensuring no steam can escape. Leave a little space inside the packets for air circulation.

          Cook the Packets:

            - Oven Method: Place the packets on a baking sheet and bake in the preheated oven for about 25-30 minutes, or until the corn is tender and the bacon is crispy.

              - Grill Method: Place the foil packets directly on the grill grates. Close the lid and cook for 20-25 minutes, rotating the packets halfway through cooking.

                Serve: Carefully open the foil packets (watch out for hot steam!). Transfer the contents to a serving dish, garnish with fresh parsley or cilantro if desired, and serve with lemon wedges on the side for an extra citrusy kick.
