2 cups fresh sweet corn kernels (or frozen, thawed)

1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup finely chopped fresh chives

2 large eggs

1/2 cup buttermilk (or regular milk with 1 tsp vinegar)

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp paprika (optional for a bit of spice)

1/4 cup grated Parmesan cheese (optional, for added flavor)

Vegetable oil for frying

Prepare Ingredients: If using fresh sweet corn, cut the kernels off the cobs. If using frozen corn, ensure it's thoroughly thawed and drained.

    Make the Batter: In a large mixing bowl, combine the corn kernels, flour, cornmeal, chives, baking powder, baking soda, salt, pepper, and paprika. Mix until well incorporated.

      Mix Wet Ingredients: In a separate bowl, whisk together the eggs and buttermilk until smooth. Pour the wet ingredients into the dry mixture and stir gently until just combined. If using, fold in the grated Parmesan cheese to enrich the flavor.

        Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; if it sizzles and bubbles, it's time to start frying.

          Fry the Fritters: Using a 1/4 cup measuring cup, scoop the batter and place it carefully into the hot oil, leaving enough space between each fritter. Flatten them slightly with the back of the cup. Fry for about 3-4 minutes on each side or until golden brown and crispy.
