Ingredients

2 cups Greek yogurt (plain or coconut flavored)

1 cup shredded unsweetened coconut

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup chopped nuts (e.g., almonds, walnuts, or pecans)

1/3 cup mini chocolate chips (optional)

Fresh fruit pieces (like mangoes or berries) for garnish

Instructions

In a large mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), vanilla extract, and sea salt. Stir until well combined and smooth.

Fold in the shredded coconut and chopped nuts gently, ensuring they are evenly distributed throughout the yogurt mixture.

If you like a hint of sweetness from chocolate, add the mini chocolate chips and fold just until mixed in.

Line a baking sheet with parchment paper for easy cleanup. Using a tablespoon or a small ice cream scoop, drop dollops of the yogurt mixture onto the parchment paper, creating clusters. Space them about an inch apart to allow for some spreading.

Once all the mixture is formed into clusters, place the baking sheet in the freezer for at least 1-2 hours, or until the clusters are firm.

Once fully frozen, remove the clusters from the baking sheet and store them in an airtight container in the freezer for up to a month. You can also freshen them up by adding pieces of fresh fruit on top before serving.

Serve these sweet coconut yogurt clusters as a healthy snack or a protein-rich breakfast, and enjoy them straight from the freezer or let them thaw slightly for a creamier texture.
