1 cup Medjool dates, pitted

1 cup nuts (almonds, walnuts, or cashews), lightly toasted

1/4 cup unsweetened cocoa powder

1/4 cup dark chocolate chips (at least 70% cocoa)

2 tablespoons coconut oil

1 teaspoon vanilla extract

Pinch of sea salt

Optional toppings: shredded coconut, crushed nuts, or cocoa powder for rolling

Prepare the Dates: If your Medjool dates are hard, soak them in warm water for about 10 minutes to soften. Drain and pat dry before using.

    Blend the Mixture: In a food processor, combine the pitted dates and toasted nuts. Pulse until finely chopped and clumping together.

      Add Flavors: Add the cocoa powder, dark chocolate chips, coconut oil, vanilla extract, and sea salt to the food processor. Blend until the mixture is smooth and sticky. It may take a couple of minutes; scrape down the sides as needed.

        Chill the Mixture: Transfer the truffle mixture to a bowl, cover, and refrigerate for about 30 minutes. This will make it easier to handle.

          Form the Truffles: Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls between your palms. If the mixture is too sticky, you can wet your hands slightly with water.

            Coat the Truffles: Roll each truffle in your choice of toppings—shredded coconut, crushed nuts, or additional cocoa powder—to add a finishing touch.

              Refrigerate Again: Place the coated truffles in an airtight container and store them in the refrigerator for at least 30 minutes to set before serving.
