2 large boneless, skinless chicken breasts

1 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon minced garlic

1 teaspoon ginger, grated

1/2 teaspoon black pepper

1 cup bell peppers (red, yellow, or green), thinly sliced

1 cup carrots, julienned

1/2 cup cilantro, chopped

8-10 large lettuce leaves (e.g., romaine or butter lettuce)

Sesame seeds for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, whisk together the sweet chili sauce, soy sauce, lime juice, minced garlic, grated ginger, and black pepper. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat and lightly grease with cooking spray or oil.

      Grill the Chicken: Remove the chicken from the marinade (reserve the leftover marinade for later) and grill the chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. The internal temperature should reach 165°F (74°C).

        Glaze with Marinade: In the last few minutes of grilling, brush the reserved marinade over the chicken for extra flavor. Remove from the grill and let it rest for 5 minutes.

          Slice the Chicken: After resting, slice the grilled chicken into thin strips.

            Assemble the Rolls: On each lettuce leaf, place a few pieces of grilled chicken, some bell pepper slices, julienned carrots, and a sprinkle of chopped cilantro.
