Sweet Chili Chicken Lettuce Wraps

1 lb ground chicken

2 tablespoons vegetable oil

1 cup bell peppers, finely chopped (red, yellow, or green)

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

1/4 cup sweet chili sauce

1 tablespoon soy sauce (low-sodium)

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

1 head of butter or iceberg lettuce, separated into leaves

1/4 cup fresh cilantro, chopped (for garnish)

1/4 cup roasted peanuts, crushed (for garnish)

Lime wedges (for serving)

Instructions
 

Heat the Oil: In a large skillet, heat the vegetable oil over medium heat.

    Sauté Aromatics: Add the chopped onion, and bell peppers to the skillet. Sauté for about 3-4 minutes until the vegetables are tender.

      Cook the Chicken: Add the ground chicken to the skillet. Cook for 5-7 minutes, stirring frequently to break it apart, until it’s browned and cooked through.

        Add Garlic and Ginger: Stir in the minced garlic and ginger. Continue to cook for another minute until fragrant.

          Mix in Sauce: In a small bowl, combine the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Pour this mixture over the chicken, stirring well to coat. Let it simmer on low heat for another 2-3 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

            Prepare Lettuce Wraps: Carefully wash and separate the lettuce leaves. Choose the larger leaves for easy wrapping.

              Assemble Wraps: Spoon the chicken mixture into the center of each lettuce leaf.

                Garnish: Top with chopped cilantro and crushed peanuts.
