1 cup rolled oats

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup almond flour

1/2 cup Medjool dates, pitted and chopped

1/4 cup pure maple syrup

1/4 cup unsweetened shredded coconut

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon ground ginger

1/4 teaspoon nutmeg

Pinch of salt

1/4 cup chopped walnuts or pecans (optional)

Extra shredded coconut or chopped nuts for rolling (optional)

Prepare the Base: In a large mixing bowl, combine the rolled oats, grated carrots, almond flour, shredded coconut, ground cinnamon, ground ginger, nutmeg, and salt. Mix well to ensure all the dry ingredients are evenly distributed.

    Blend the Dates: In a food processor, pulse the chopped Medjool dates until they form a sticky paste. This will act as a natural sweetener and binder for your energy bites.

      Combine Ingredients: In the bowl with the dry ingredients, add the date paste, maple syrup, and vanilla extract. Mix everything together thoroughly until a uniform mixture forms. If the mixture feels too dry, you can add a splash of water or more maple syrup—if it’s too sticky, add a bit more almond flour or oats.

        Add Nuts (Optional): If you’re using chopped walnuts or pecans, fold them into the mixture for an added crunch and flavor boost.

          Form the Bites: Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball, about the size of a golf ball. Place each energy bite on a parchment-lined baking sheet.
