Sweet and Savory Baked Plantain Boats

4 ripe plantains (yellow with slight black spots)

1 cup cooked black beans (canned or homemade, rinsed and drained)

1 cup cherry tomatoes, halved

1/2 cup diced red onion

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup chopped fresh cilantro (plus extra for garnish)

1 tablespoon lime juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup crumbled feta cheese or a vegan alternative (optional)

1 avocado, diced (for topping)

Olive oil for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Plantains: Cut the plantains in half lengthwise. Use a spoon to carefully scoop out some of the flesh to create a boat-like structure while keeping the outer shell intact. Reserve the scooped-out flesh for later.

      Boil the Plantain Boats: Place the plantain halves in a pot of boiling water for about 5-7 minutes, just until slightly softened. Remove and let them cool down a bit, then place them on a baking sheet lined with parchment paper.

        Prepare the Filling: In a mixing bowl, combine the cooked black beans, cherry tomatoes, diced red onion, corn, chopped cilantro, lime juice, cumin, smoked paprika, salt, and black pepper. Mix well.

          Fill the Boats: Spoon the filling mixture generously into each plantain boat, allowing them to mound slightly. If desired, add the reserved plantain flesh to the mixture for added texture and flavor.

            Top with Cheese: If using, sprinkle crumbled feta cheese over each plantain boat.

              Bake: Drizzle a little olive oil over the filled plantains, then bake in the preheated oven for 20-25 minutes or until the plantains are golden and the filling is heated through.

                Garnish and Serve: Once baked, remove from the oven and let cool for a couple of minutes. Top with diced avocado and additional fresh cilantro before serving. Enjoy these delectable sweet and savory bites warm!
