Sun-Dried Tomato Chicken Couscous

1 cup couscous

2 cups chicken broth (or vegetable broth)

1 lb chicken breast, boneless and skinless

1/2 cup sun-dried tomatoes, chopped (in oil for extra flavor)

1 cup spinach leaves, fresh

1/2 cup feta cheese, crumbled

1/4 cup pine nuts, toasted

3 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley, for garnish

Cook the Couscous: In a medium saucepan, bring 2 cups of chicken broth to a boil. Once boiling, remove from heat, add couscous, cover, and let it sit for about 5 minutes or until the liquid is fully absorbed. Fluff with a fork and set aside.

    Prepare the Chicken: While the couscous is resting, season the chicken breasts with salt, pepper, dried oregano, and red pepper flakes (if using).

      Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet, let it rest for a few minutes, and then slice into bite-sized pieces.

        Sauté the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
