2 cups sugar snap peas, trimmed and halved

1 cup cherry tomatoes, halved

1 small cucumber, diced

½ red bell pepper, diced

¼ red onion, thinly sliced

¼ cup fresh mint leaves, chopped

¼ cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon honey

Salt and pepper to taste

¼ cup toasted sunflower seeds or slivered almonds (for added crunch)

Prepare the Vegetables: Begin by rinsing the sugar snap peas under cold water. Trim the ends and cut them in half. Dice the cucumber, halve the cherry tomatoes, and chop the red bell pepper into bite-sized pieces. Thinly slice the red onion and set everything aside in a large mixing bowl.
