Stuffed Bell Pepper Nacho Slices

Ingredients
  

4 medium bell peppers (any color)

1 cup cooked quinoa or rice

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheese (cheddar or Mexican blend)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1 ripe avocado, diced

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

1 lime, juiced

Instructions
 

Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Slice each pepper vertically into 1-inch slices. Lay them on a baking sheet lined with parchment paper.

    Make the Filling: In a large mixing bowl, combine the cooked quinoa or rice, black beans, corn, half of the shredded cheese, cumin, chili powder, garlic powder, onion powder, lime juice, salt, and pepper. Mix until well combined.

      Stuff the Peppers: Spoon the filling mixture into each bell pepper slice, pressing it down gently. Make sure each slice is generously filled.

        Bake: Place the stuffed pepper slices on the baking sheet in a single layer. Bake in the preheated oven for about 20-25 minutes, or until the peppers are tender and the filling is heated through.

          Add Cheese: After 20-25 minutes, remove the baking sheet from the oven, sprinkle the remaining cheese on top of each stuffed slice, and return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Once done, remove from the oven and let cool for a couple of minutes. Top each slice with diced avocado and fresh cilantro. Serve with sour cream or Greek yogurt on the side.
