Ingredients

6 cups fresh baby spinach leaves, washed and dried

2 cups strawberries, hulled and sliced

1/2 cup crumbled feta cheese

1/3 cup pecans, toasted

1/4 red onion, thinly sliced

1/4 cup olive oil

2 tablespoons apple cider vinegar

2 tablespoons honey

1 tablespoon poppy seeds

Salt and pepper to taste

Instructions

Prep the Salad Ingredients:

    - Begin by washing and drying the baby spinach leaves thoroughly. Place them in a large salad bowl.

      - Hull and slice the strawberries, and add them to the bowl with the spinach.

        - Crumble the feta cheese over the top, then sprinkle in the toasted pecans and red onion slices.

          Make the Poppy Seed Dressing:

            - In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, poppy seeds, salt, and pepper until well combined and emulsified. Adjust seasoning to taste.

              Combine and Serve:

                - Drizzle the dressing over the salad and gently toss everything together until evenly coated.

                  - Optionally, allow the salad to sit for about 5 minutes before serving to let the flavors meld. Serve chilled or at room temperature.
