1/4 cup red onion, thinly sliced

1/4 cup walnuts or pecans, chopped

1/4 cup extra-virgin olive oil

2 tbsp balsamic vinegar

1 tbsp honey

Salt and pepper, to taste

Instructions

Cook the Pasta: In a large pot of boiling salted water, add the farfalle pasta. Cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Adjust seasoning to taste.

Mix the Salad: In a large mixing bowl, combine the cooled pasta, fresh spinach, sliced strawberries, cherry tomatoes, red onion, walnuts, and feta cheese.

Dress the Salad: Drizzle the dressing over the pasta salad and gently toss everything together until well coated.

Chill: Cover the salad and let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serve: Give the salad a final toss, adjust the seasoning if necessary, and serve chilled or at room temperature. Enjoy your fresh Strawberry Spinach Pasta Salad!
