Strawberry Cream Icebox Cups

Ingredients
  

2 cups fresh strawberries, hulled and sliced

1 tablespoon sugar

1 teaspoon lemon juice

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

½ cup unsalted butter, melted

Mint leaves for garnish (optional)

Instructions
 

In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Mix gently and set aside for about 15-20 minutes to let the strawberries macerate.

    In another bowl, whip the heavy cream until it starts to thicken. Gradually add powdered sugar and vanilla extract, and continue whipping until soft peaks form. Be careful not to overwhip!

      In a small bowl, mix the graham cracker crumbs with melted butter until fully combined.

        To assemble the icebox cups, start by layering about 2 tablespoons of the graham cracker mixture at the bottom of each cup.

          Add approximately 2 tablespoons of the whipped cream on top of the graham cracker layer, smoothing it out gently.

            Spoon a layer of the macerated strawberries over the whipped cream, then repeat the layers until the cups are full, finishing with a layer of whipped cream topped with a few strawberries.

              Cover the cups with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to let the flavors meld together.
