Ingredients

8 slices of soft brioche or milk bread

1 cup fresh strawberries, hulled and sliced

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

2 tablespoons cream cheese, softened

2 tablespoons granulated sugar

Zest of 1 lemon

Pinch of salt

Optional: Mint leaves for garnish

Instructions

Prepare the Cream Mixture: In a mixing bowl, combine the heavy cream, powdered sugar, vanilla extract, and a pinch of salt. Using a hand mixer or whisk, beat the cream until stiff peaks form. This should take about 2-3 minutes.

Mix in the Cream Cheese: In a separate small bowl, combine the softened cream cheese with granulated sugar and lemon zest. Whip until smooth and creamy. Gently fold this cream cheese mixture into the whipped cream until well combined.

Prepare the Strawberries: In another bowl, toss the sliced strawberries with a tablespoon of granulated sugar. Let them sit for about 10-15 minutes to macerate, which will enhance their sweetness.

Assemble the Sando: Lay out four slices of the brioche or milk bread on a clean surface. Spread a generous layer of the cream mixture over each slice. Layer the macerated strawberries on top of the cream, arranging them evenly.

Top It Off: Place the remaining slices of bread on top of the strawberries, gently pressing down to create a sandwich.

Slice and Serve: Using a sharp knife, slice each sandwich diagonally into halves or quarters for easy handling. Optionally, garnish with fresh mint leaves for a pop of color and flavor.

Chill (optional): If desired, place the assembled sandwiches in the refrigerator for about 10 minutes to slightly chill before serving. This step is perfect for a warm day.
