2 tablespoons rice vinegar

1 tablespoon mirin (optional)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Prepare the Chicken: Start by patting the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
