Sticky Glazed Tofu Lettuce Boats

1 block (14 oz) firm tofu, pressed and drained

2 tablespoons cornstarch

2 tablespoons vegetable oil

3 tablespoons soy sauce

2 tablespoons maple syrup or honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 garlic cloves, minced

1 tablespoon grated fresh ginger

1 teaspoon sriracha or chili paste (optional)

1 red bell pepper, julienned

2 green onions, chopped

1 small cucumber, sliced thinly

1 cup shredded carrots

1 head of butter lettuce or iceberg lettuce, leaves separated

Sesame seeds for garnish

Fresh cilantro or mint for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes. In a mixing bowl, toss the tofu cubes with cornstarch until they are evenly coated. This will help achieve a crispy texture when cooked.

    Make the Glaze: In a small bowl, whisk together the soy sauce, maple syrup (or honey), rice vinegar, sesame oil, minced garlic, grated ginger, and sriracha if using. Set aside.

      Cook the Tofu: Heat vegetable oil in a large skillet over medium-high heat. Add the coated tofu cubes in a single layer and fry until golden brown and crispy on all sides, about 8-10 minutes. Stir occasionally to ensure even cooking.

        Add the Glaze: Pour the sauce mixture over the crispy tofu in the skillet. Reduce the heat to medium and stir gently to coat the tofu in the glaze. Cook for another 2-3 minutes until the sauce thickens slightly and becomes sticky.

          Assemble the Lettuce Boats: Take a lettuce leaf and place a few spoonfuls of the sticky glazed tofu in the center. Top with julienned red bell pepper, sliced cucumber, shredded carrots, and chopped green onions.

            Garnish and Serve: Sprinkle with sesame seeds and fresh herbs like cilantro or mint. Serve immediately and enjoy the fresh and crispy flavors!
