Steak & Queso Rice

1 lb flank steak, thinly sliced

2 cups cooked white rice (jasmine or basmati recommended)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup queso dip (store-bought or homemade)

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Steak: Season the flank steak slices with salt, pepper, smoked paprika, and ground cumin. Let it marinate for about 15 minutes to absorb the flavors.

    Cook the Steak: Heat olive oil in a large skillet over medium-high heat. Once hot, add the marinated steak strips. Sear for about 3-4 minutes on each side until cooked through and browned. Remove steak from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 4-5 minutes until soft and fragrant. Add minced garlic and cook for an additional minute.

        Combine Ingredients: Return the cooked steak to the skillet with the sautéed vegetables. Stir until well combined, and then add in the cooked rice. Mix together thoroughly.
