Spinach Feta Egg Muffins

6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup milk (or non-dairy alternative)

1/4 cup bell pepper, diced (red or yellow)

1/4 cup onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon salt (to taste)

1/4 teaspoon red pepper flakes (optional for heat)

Olive oil or cooking spray for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin with olive oil or cooking spray to prevent sticking.

    Prepare the Veggies: In a medium-sized skillet, heat a small drizzle of olive oil over medium heat. Add the chopped onions and bell peppers. Sauté for about 3-4 minutes until they start to soften. Add the chopped spinach and continue cooking for another minute until wilted. Remove from heat and let it cool slightly.

      Beat the Eggs: In a large mixing bowl, whisk together the eggs, milk, garlic powder, black pepper, salt, and red pepper flakes until well combined.

        Combine Ingredients: Once the sautéed veggies have cooled a bit, fold them into the egg mixture. Gently stir in the crumbled feta cheese until evenly distributed.

          Fill the Muffin Tin: Pour the egg and vegetable mixture evenly into the prepared muffin tin, filling each cup about 2/3 full to allow for expansion while baking.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are set in the center and lightly golden on top. A toothpick inserted into the center should come out clean.

              Cool and Serve: Remove from the oven and allow the muffins to cool in the tin for about 5 minutes. Then, gently run a knife around the edges and pop them out.

                Enjoy: These muffins can be served warm or at room temperature. They make a perfect breakfast option or a snack on the go!
