Spinach Chicken Casserole with Cream Cheese and Mozzarella

2 cups cooked chicken, shredded or cubed

4 cups fresh spinach, chopped (or 2 cups frozen spinach, thawed and drained)

8 oz cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cooked rice or quinoa (optional)

1/2 cup grated Parmesan cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Spinach: In a large skillet over medium heat, add a splash of olive oil if desired. Add the chopped fresh spinach and cook until wilted (about 3-4 minutes). If using frozen spinach, heat through until warmed. Set aside.

      Mix the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until smooth and well incorporated.

        Combine Ingredients: Add the cooked chicken and wilted spinach to the cream cheese mixture. If you’re using cooked rice or quinoa, fold that in as well. Make sure everything is evenly combined.

          Prepare the Casserole Dish: Lightly grease a 9x13 inch casserole dish. Pour the chicken and spinach mixture into the dish, spreading it evenly.

            Add Cheese: Sprinkle the shredded mozzarella evenly over the top of the casserole. Then, add the grated Parmesan cheese for a delightful crust.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheeses are bubbly and golden brown.

                Garnish & Serve: Once baked, let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
