Spicy Thai Chicken Rice Bowls

1 lb (450g) chicken breast, thinly sliced

2 cups jasmine rice

1 cup chicken broth

2 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons chili paste (adjust for spice preference)

1 tablespoon brown sugar

3 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 tablespoon vegetable oil

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Sliced green onions (for garnish)

Crushed peanuts (optional, for garnish)

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until the rice is fluffy and all the liquid has been absorbed. Remove from heat and let sit, covered for another 5 minutes.

    Marinate the Chicken: In a bowl, whisk together soy sauce, fish sauce, chili paste, brown sugar, minced garlic, and grated ginger. Add the sliced chicken and toss to coat evenly. Allow it to marinate for at least 20 minutes.

      Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken along with all the marinade. Cook, stirring frequently, until the chicken is cooked through and nicely caramelized, about 5-7 minutes.

        Add Veggies: Toss in the sliced red bell pepper and snap peas. Stir-fry for an additional 2-3 minutes until the veggies are tender but still crisp.

          Assemble the Bowl: Divide the cooked jasmine rice between serving bowls. Top each bowl with the spicy chicken and vegetable mixture. Drizzle with lime juice for added zest.

            Garnish & Serve: Finish with chopped cilantro, sliced green onions, and crushed peanuts, if using. Serve immediately and enjoy the burst of Thai flavors!
