1 cup unsulfured molasses

1 cup packed light brown sugar

1/2 cup unsalted butter, softened

1 large egg

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon sea salt

1/4 teaspoon black pepper (optional for extra spice)

1/2 cup granulated sugar (for rolling cookies)

Optional: 1/2 cup chopped nuts (walnuts or pecans) or raisins for added texture

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large bowl, combine the unsulfured molasses, brown sugar, and softened butter. Using a hand or stand mixer, beat the mixture on medium speed until well blended and smooth, about 2-3 minutes.

      Add Egg: Add the egg to the molasses mixture and continue to beat until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, salt, and black pepper (if using).

          Blend Mixtures: Gradually add the dry mixture to the wet mixture, beating on low speed until just combined. If you're adding nuts or raisins, gently fold them into the dough at this stage.
