Spicy Sausage, Bean & Rice Skillet

1 lb spicy Italian sausage (or your favorite spicy sausage)

1 cup long-grain white rice (uncooked)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 medium onion, chopped

1 red bell pepper, chopped

2 cloves garlic, minced

2 cups chicken or vegetable broth

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon crushed red pepper flakes (adjust for spice)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

1 avocado, diced (optional, for serving)

Lime wedges (for serving)

Instructions
 

Brown the Sausage: In a large skillet, heat olive oil over medium heat. Add the spicy sausage and cook, breaking it apart with a wooden spoon, until it's browned and cooked through (about 5-7 minutes). Remove sausage from skillet and set aside.

    Sauté Vegetables: In the same skillet, add the chopped onion and red bell pepper. Sauté for about 4-5 minutes until they are softened. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add Spices & Rice: Stir in the smoked paprika, cumin, and crushed red pepper flakes. Add the uncooked rice and stir to coat it in the spice mixture for about 1 minute.

        Combine Ingredients: Return the browned sausage to the skillet. Add the drained black beans and canned diced tomatoes (including juices). Pour in the chicken or vegetable broth, and stir everything together. Season with salt and pepper to taste.

          Cook the Rice: Bring the mixture to a simmer. Cover the skillet with a lid and reduce the heat to low. Let it cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

            Rest & Fluff: Once cooked, remove the skillet from heat and let it sit covered for an additional 5 minutes. Then, use a fork to fluff the rice and mix everything together.

              Serve: Garnish with fresh cilantro and serve warm, topped with diced avocado and lime wedges on the side.
