Spicy Mango Chicken Wraps

2 cups shredded cooked chicken (rotisserie chicken works great)

1 ripe mango, diced

1 red bell pepper, thinly sliced

1 avocado, sliced

1 cup fresh spinach or arugula

1/4 cup red onion, thinly sliced

1/4 cup cilantro, chopped

1/4 cup mayo (or Greek yogurt for a healthier option)

2 tablespoons sriracha sauce (adjust to taste)

Juice of 1 lime

Salt and pepper to taste

4 large whole wheat or spinach tortillas

Instructions
 

Prepare the Sauce: In a small bowl, mix the mayo (or Greek yogurt) with sriracha sauce and lime juice. Stir until well combined. Taste and add salt and pepper as needed.

    Combine the Filling: In a large mixing bowl, combine the shredded chicken, diced mango, sliced red bell pepper, sliced avocado, spinach (or arugula), sliced red onion, and chopped cilantro. Drizzle the sauce over the mixture and toss gently until everything is well coated.

      Assemble the Wraps: Lay out the tortillas on a clean surface. Evenly distribute the chicken and mango mixture onto the center of each tortilla, leaving about an inch of space on the sides.
