8 chicken drumsticks

3 tablespoons olive oil

6 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon chili powder

1 teaspoon cayenne pepper (adjust to taste)

Zest and juice of 2 limes

1 tablespoon honey

Salt and black pepper to taste

1 red bell pepper, cut into strips

1 green bell pepper, cut into strips

1 red onion, cut into wedges

Fresh cilantro for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a large baking tray lined with parchment paper.

    Prepare the Marinade: In a mixing bowl, whisk together the olive oil, minced garlic, smoked paprika, chili powder, cayenne pepper, lime zest, lime juice, honey, salt, and pepper until well combined.

      Marinate the Drumsticks: Add the chicken drumsticks to the bowl with the marinade. Toss them until they are thoroughly coated. Ideally, let them marinate for at least 30 minutes to an hour in the refrigerator for maximum flavor.

        Add the Vegetables: On the prepared baking tray, arrange the red bell pepper, green bell pepper, and red onion in an even layer. Place the marinated drumsticks on top of the vegetables.

          Bake: Transfer the tray to the preheated oven and bake for 35-40 minutes or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C). You can turn on the broiler for the last 5 minutes for additional crispiness.
