Spicy Chipotle Turkey Quesadilla Pockets

1 lb ground turkey

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced

1-2 chipotle peppers in adobo sauce, chopped (adjust based on spice preference)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil

4 large flour tortillas

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Season the Meat: Add the ground turkey to the skillet. Cook for 7-10 minutes until browned and fully cooked, breaking it apart with a spatula. Once the turkey is browned, stir in the chopped chipotle peppers, cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 2-3 minutes to blend the flavors. Remove from heat and let cool slightly.

      Assemble the Quesadilla Pockets: On a clean surface or countertop, place a tortilla flat. Spoon a generous amount of the turkey mixture onto one half of the tortilla. Top with a mix of both cheeses (Monterey Jack and cheddar). Fold the tortilla over to create a pocket and press lightly to seal.

        Cook the Quesadilla Pockets: Wipe out the skillet and lightly oil it again. Heat over medium-high heat. Carefully place the folded quesadilla pocket into the skillet. Cook for 3-4 minutes on one side until golden brown and crispy. Flip and cook for an additional 3-4 minutes on the other side. Remove from the skillet and cut into wedges.
