Spicy Chickpea Avocado Naan Pizza

2 large naan bread (store-bought or homemade)

1 can (15 oz) chickpeas, rinsed and drained

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup shredded mozzarella cheese (or vegan cheese)

1 tablespoon fresh lime juice

1/4 cup fresh cilantro, chopped (for garnish)

Optional: red pepper flakes for extra heat

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a medium bowl, combine the drained chickpeas with olive oil, smoked paprika, cumin, cayenne pepper, salt, and pepper. Toss until the chickpeas are evenly coated.

      Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20 minutes or until crispy, shaking the pan halfway through to ensure even cooking.

        Assemble Naan Pizza: While the chickpeas are roasting, lay the naan bread on a baking sheet. Sprinkle a layer of mozzarella cheese over each naan. Add the halved cherry tomatoes and sliced red onion evenly on top.

          Add Avocado: Once the chickpeas are done, remove them from the oven and set aside to cool slightly. Arrange the avocado slices over the naan pizzas, then top with the roasted chickpeas.

            Bake Naan Pizza: Bake the assembled naan pizzas in the oven for another 10-12 minutes or until the cheese is melted and bubbly and the naan is slightly crispy.

              Finish and Serve: Once out of the oven, drizzle fresh lime juice over the pizzas and garnish with chopped cilantro. For some added heat, sprinkle red pepper flakes on top if desired. Slice and serve immediately.
