1 cup green or brown lentils, rinsed

1 tablespoon olive oil

1 medium onion, diced

3 garlic cloves, minced

1-inch piece fresh ginger, grated

1 carrot, diced

1 celery stalk, diced

1 bell pepper (any color), diced

1 teaspoon ground turmeric

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon ground coriander

4 cups vegetable broth (or water)

1 can (14 oz) coconut milk

Salt and pepper, to taste

Juice of 1 lemon

Fresh cilantro or parsley, for garnish

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Add the Carrots and Celery: Toss in the diced carrot and celery, cooking for 3-4 minutes until they begin to soften.

      Incorporate the Bell Pepper: Add the diced bell pepper and sauté for an additional 2-3 minutes, allowing it to soften.
