Spiced Sweet Potato Lentil Stew

2 medium sweet potatoes, peeled and diced

1 cup dried green or brown lentils, rinsed

1 medium onion, chopped

3 garlic cloves, minced

1-inch piece of fresh ginger, grated

1 can (14 oz) diced tomatoes (with juices)

4 cups vegetable broth

1 cup coconut milk

2 cups kale, chopped (stems removed)

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon smoked paprika

½ teaspoon turmeric

½ teaspoon cinnamon

1 teaspoon chili powder (adjust to taste)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro and lime wedges for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

    Add Spices: Stir in the ground cumin, coriander, smoked paprika, turmeric, cinnamon, and chili powder. Cook for 1-2 minutes, allowing the spices to bloom and release their aromatic flavors.

      Combine Ingredients: Add the diced sweet potatoes, rinsed lentils, diced tomatoes (with their juices), and vegetable broth to the pot. Stir well to combine all ingredients.

        Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 25-30 minutes, or until the lentils and sweet potatoes are tender.

          Add Coconut Milk & Kale: Once the lentils and sweet potatoes are cooked, stir in the coconut milk and chopped kale. Cook for another 5-7 minutes until the kale is wilted and the stew is heated through.

            Season: Taste and adjust seasoning with salt, pepper, and additional chili powder if desired.

              Serve: Ladle the stew into bowls and garnish with fresh cilantro and a squeeze of lime juice, if you like.
