6 medium-sized apples (preferably a mix of sweet and tart, like Fuji and Granny Smith), peeled, cored, and chopped

1 cup of brown sugar

1/2 cup of granulated sugar

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/4 teaspoon ground cloves

1/2 cup apple cider

1 tablespoon lemon juice

1 teaspoon vanilla extract
