Spiced Chai Oat Breakfast Cookies

1 ½ cups rolled oats

½ cup whole wheat flour

½ cup brown sugar (packed)

½ cup coconut oil (melted) or unsalted butter

½ cup maple syrup or honey

1 chai tea bag (or 1 tsp chai spice blend)

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

½ cup raisins or mixed dried fruit (optional)

½ cup chopped nuts (walnuts or almonds, optional)

½ teaspoon ground cinnamon

¼ teaspoon ground ginger

¼ teaspoon ground cardamom

¼ teaspoon ground cloves

¼ teaspoon black pepper (optional for extra spice)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Infuse the Chai Flavor: In a small saucepan, combine ¼ cup water with the chai tea bag. Heat over low until it's warm enough to steep. Allow the tea bag to steep for about 5 minutes. Remove the bag and let the tea cool slightly.

      Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, and black pepper (if using). Stir well to evenly distribute the spices.

        Combine the Wet Ingredients: In another bowl, whisk together the melted coconut oil (or butter), brown sugar, maple syrup (or honey), vanilla extract, and the cooled chai tea until smooth and well combined.

          Combine Wet and Dry Mixtures: Pour the wet mixture into the dry mixture. Stir gently until just combined. If desired, fold in the raisins and chopped nuts.

            Form the Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them a few inches apart as they will spread slightly.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the tops have set. They may look soft but will firm up as they cool.

                Cool: Remove from the oven and let the cookies rest on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
