1 lb ground beef

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 can (8 oz) tomato sauce

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 cup beef broth (or water)

Fresh cilantro, for garnish (optional)

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Cook the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté for about 3-4 minutes, or until the vegetables are softened.

      Add Seasoning: Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to coat the beef and vegetables with the spices.

        Combine Ingredients: Pour in the black beans, diced tomatoes with their juices, tomato sauce, and beef broth. Stir everything together until well combined.

          Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer uncovered for about 15 minutes, stirring occasionally. If the chili gets too thick, add a little more beef broth or water to reach your desired consistency.
