Ingredients
  

1 cup fresh raspberries (plus extra for garnish)

1/4 cup granulated sugar

1 tablespoon fresh mint leaves (plus extra for garnish)

2 tablespoons freshly squeezed lemon juice

2 cups sparkling water or lemon-lime soda

2 cups vanilla ice cream

Mint sprigs for garnish

Optional: lime wedges for an extra zing

Prepare the Raspberry Syrup: In a small saucepan over medium heat, combine the fresh raspberries, sugar, mint leaves, and lemon juice. Stir gently until the raspberries break down and the mixture comes to a simmer. Let it simmer for about 5-7 minutes until the syrup thickens slightly. Remove from heat and strain the mixture through a fine mesh sieve to remove the seeds. Let cool.

    Assemble the Floats: In tall glasses, add about 2 tablespoons of the raspberry syrup to the bottom of each glass. Carefully add a generous scoop of vanilla ice cream on top of the syrup.

      Add Fizz: Slowly pour sparkling water or lemon-lime soda over the ice cream until the glass is nearly full. Watch as the fizz creates a delightful bubbling effect!
