2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

4 cups mixed salad greens (romaine, spinach, and arugula)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1/2 cup red onion, thinly sliced

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 lime, juiced

1/4 cup ranch dressing (or your favorite dressing)

Instructions
 

Prepare the Chicken: In a small bowl, mix together olive oil, smoked paprika, ground cumin, chili powder, salt, and pepper. Rub this mixture all over the chicken breasts.

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Once hot, add the seasoned chicken and cook for about 6-7 minutes on each side, or until fully cooked and juices run clear (internal temperature should reach 165°F/75°C). Remove from heat and let it rest for 5 minutes before slicing.

      Assemble the Salad: In a large bowl, combine mixed salad greens, cherry tomatoes, corn, black beans, diced avocado, red onion, and half of the cilantro. Toss gently to mix.

        Add the Chicken: Slice the chicken breasts into strips and add them to the top of the salad mixture.

          Finish with Dressing: Drizzle lime juice and ranch dressing over the salad. Sprinkle the remaining cilantro and shredded cheese on top.
