2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

½ cup powdered sugar (for icing)

1 tablespoon milk (for icing)

Cinnamon Filling:

½ cup brown sugar, packed

2 tablespoons ground cinnamon

4 tablespoons unsalted butter, softened

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large bowl, using a mixer, beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy (about 2-3 minutes).

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.

            Prepare Cinnamon Filling: In a small bowl, combine the brown sugar, ground cinnamon, and softened butter until a paste forms.

              Form Cookies: Use a tablespoon to scoop dough and flatten it slightly in your hand. Place about a teaspoon of the cinnamon filling in the center. Fold the dough around the filling to enclose it and roll it into a ball. Repeat with the remaining dough and filling.
