Ingredients

1 lb carrots, peeled and cut into fry shapes

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will ensure your carrot fries get crispy.

Prepare Carrots: Peel the carrots and cut them into thin, fry-like strips, about 1/4 inch thick. Try to keep them as uniform in size as possible for even cooking.

Make the Glaze: In a large mixing bowl, combine olive oil, maple syrup, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and freshly cracked black pepper. Whisk until well blended.

Coat the Carrots: Add the carrot fries to the mixing bowl and toss until they are evenly coated with the smoky maple glaze.

Arrange on a Baking Sheet: Line a baking sheet with parchment paper or lightly grease it with some olive oil. Spread the glazed carrot fries in a single layer on the sheet, ensuring they are not overcrowded for even roasting.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, flipping the fries halfway through. They should be tender on the inside and caramelized on the outside.

Garnish and Serve: Once baked to a golden brown, remove the fries from the oven and garnish with freshly chopped parsley if desired. Serve warm.
