Smashed Potato Parmesan Waffle Bake

Ingredients
  

2 pounds of baby potatoes

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/4 cup butter, melted

2 cloves garlic, minced

2 teaspoons fresh thyme (or 1 teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup chopped green onions

2 large eggs

1 cup all-purpose flour

Non-stick cooking spray or oil for greasing

Instructions
 

Boil the Potatoes: Place the baby potatoes in a large pot and cover with water. Bring to a boil, adding a generous pinch of salt. Cook until the potatoes are fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Preheat Waffle Iron: While the potatoes are cooling, preheat your waffle iron according to the manufacturer’s instructions. Lightly grease the plates with cooking spray or oil.

      Smashed Potatoes: Once the potatoes are cool enough to handle, transfer them to a large bowl. Use a potato masher or fork to smash the potatoes until they are chunky but not completely puréed.

        Mix Ingredients: Add Parmesan cheese, mozzarella cheese, sour cream, melted butter, minced garlic, thyme, smoked paprika, salt, pepper, and green onions to the bowl with smashed potatoes. Mix until well combined.

          Add Eggs and Flour: In a small bowl, beat the eggs and then fold them into the potato mixture. Gradually add the flour while mixing to form a cohesive batter.

            Waffle Baking: Scoop about 1/2 cup of the potato mixture into the preheated waffle iron, spreading it evenly. Close the lid and cook until golden brown and crispy, about 5-7 minutes. Repeat with the remaining mixture.

              Assemble the Bake: Preheat your oven to 350°F (175°C). Arrange the cooked potato waffles in a single layer in a greased 9x13 inch baking dish.

                Bake Again: Bake the assembled waffles in the preheated oven for 15-20 minutes, or until heated through and slightly crispy on the outside.

                  Serve: Remove the dish from the oven and let it cool for a few minutes. Serve warm, garnished with extra green onions or a sprinkle of Parmesan cheese.
