Slow Cooker Balsamic Chili

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes (with juice)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

2 tbsp tomato paste

1 cup beef or vegetable broth

1/3 cup balsamic vinegar

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped green onions, avocado

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey until it's no longer pink. Drain excess fat and transfer the meat to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion, minced garlic, and bell pepper. Cook for about 5 minutes until they are softened. Add to the slow cooker.

      Add Remaining Ingredients: In the slow cooker, add the diced tomatoes (with juice), kidney beans, black beans, tomato paste, broth, and balsamic vinegar. Sprinkle in the chili powder, cumin, smoked paprika, and season with salt and pepper. Stir everything together until well combined.

        Slow Cook: Cover the slow cooker and set it on low for 6-8 hours, or on high for 3-4 hours. The flavors will meld together and create a rich, hearty chili.
