For the Pulled Beef:

3 pounds beef chuck roast

1 tablespoon olive oil

1 onion, finely chopped

4 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

1 teaspoon chipotle powder

1 teaspoon salt

½ teaspoon black pepper

1 can (14.5 oz) diced tomatoes (with juices)

1 cup beef broth

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire sauce

For Serving:

Corn or flour tortillas

Fresh cilantro, chopped

Crumbled Cotija cheese

Lime wedges

Avocado slices

Pickled red onions (optional)

Instructions

Prepare the Beef: Pat the beef chuck roast dry with paper towels, then sprinkle generously with salt, pepper, smoked paprika, cumin, oregano, and chipotle powder on all sides.

Sear the Meat: In a large skillet, heat olive oil over medium-high heat. Sear the beef roast for about 4-5 minutes on each side until browned. This step adds depth and flavor to your pulled beef.

Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Combine Ingredients in Slow Cooker: Transfer the seared beef into a slow cooker. Add the sautéed onion and garlic, diced tomatoes (with juices), beef broth, apple cider vinegar, and Worcestershire sauce. Make sure the beef is mostly submerged in the liquid.

Slow Cook: Cover the slow cooker and set it to low. Cook for 8-10 hours or high for 4-6 hours, until the beef is fork-tender and easily pulls apart.

Shred the Beef: Once cooked, remove the beef from the slow cooker and place it on a large cutting board. Using two forks, shred the beef into bite-sized pieces. Return the shredded beef to the slow cooker to soak up the remaining juices.

Heat the Tortillas: While the beef absorbs the flavors, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Assemble Tacos: Layer the pulled beef onto the warm tortillas. Top with chopped cilantro, crumbled Cotija cheese, avocado slices, and pickled red onions for a flavor explosion. Serve with lime wedges on the side.

Enjoy: Gather your friends and family, serve these delicious smoky chipotle pulled beef tacos, and soak in the flavors of your culinary creation!
