4 cups vegetable broth (low-sodium)

1 cup ripe cherry tomatoes, halved

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup fresh basil leaves, chopped

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Instructions
 

Warm the Broth: In a medium saucepan, bring the vegetable broth to a gentle simmer. Keep it warm over low heat, as you'll be adding it to the risotto later.

    Sauté Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until soft and translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Rice: Stir in the Arborio rice and toast it for about 2 minutes, ensuring it’s well-coated with the oil and mixed with the onions and garlic. This step enhances the nutty flavor of the rice.

        Deglaze with Wine: If using, pour in the dry white wine and cook, stirring constantly, until the liquid is mostly absorbed by the rice.
